New Book From an Old Family
Royal Gazette Bermuda - Business Section
The Outerbridge family has added a
bit of spice to their age old business with their newest Outerbridge's
Original product - a cookbook. Filled with hundreds of recipes concocted
in Outerbridge family kitchens, the 172 page cookbook compiled by Ms.
Alexis Outerbridge, is strictly "for those who like it hot."
Ms. Outerbridge spent five years putting the book together with the help
of her uncle Mr. Yeaton Outerbridge. She tested every recipe, then
illustrated designed and edited the cookbook.
Most of the recipes call for at least one of the famous Outerbridge's
Originals sherry pepper products - Sherry Peppers Sauce, Sherry Rum
Peppers Sauce, Full Hot Rum Peppers Sauce, Bloody Mary Fix, Original
Full Hot Mustard Sauce, Barbecue Sauce, Very Hot Barbecue Sauce, Wine
Vinegar Peppers Sauce, Mild Hot Starboard Sherry Pepper Jelly, Mild
Masthead Onion Jelly, and Hot Hot Port Sherry Pepper Jelly. All the
concentrates are made in Mr. Outerbridges Harrington Sound Road home.
"In the cellar of the old staff quarters at 'Villa Monticello'
Yeaton still stirs up the original secret brew that gives all
Outerbridges products their particular kick" the books introduction
says. "Most of the spicy sauces bear reference, in one way or
another to the 'term' hot." In Bermuda, for the uninformed, if you
have been out on a bit of a toot and imbibed a little too much, you are
known as hot. On the other hand if you were out most of the night and
'legless' some might just call you full hot. If two or three days have
gone by and people were about to report you missing, you are "Royal Full
Hot."
Throughout the book, little hints, bits of Bermuda lore, and comments
from family members who have submitted recipes are found "In
Outerbridges Corner".
The cookbook is divided into appetizers, drinks, starters, soups, eggs,
soufflés, salads, sandwiches, bananas and Bermudiana, fish, meat,
vegetables, pasta, sauces, dressings, dips, and spreads, and sweet
things. Included are recipes for guacamole, guacamuda, Bermuda rarebit,
Villa Monticello sea bake, roast lamb with sherry peppers and mint, and
mustard wine steak.
There are two versions of Bermuda fish chowder, and of course one for
traditional Bermuda cod fish and bananas.
And marinades include rum peppers vinaigrette and sherryaki
marinade.
The cook book sells for $9.95 and Ms. Outerbridge will be on hand at the
Bookmart signing copies next Friday and Saturday.
Outerbridge's Cookbook, printed by R&R Donnelley
& Sons is dedicated to the late Robert (Robbie) Dean Outerbridge,
former RAF pilot and Member of Parliament, and Mr. (Yeaton) Outerbridges
partner in starting the sherry peppers business in 1964.
